THAI CHICKEN PEANUT NOODLES


I've been trying a lot of new recipes lately and my sister, Jenna, and I decided we'd start sharing more of them. Whoever thought of this blog thing is a genius, I've found more delicious cooking websites than I ever could've dreamed!! So last night we had Thai Chicken Peanut Noodles and let me tell you it was absolutely fantastic!! (If you like Thai of course) Cameron said it was probably his favorite meal that I've ever made. I found this recipe on http://sisterscafe.blogspot.com/ and stole the picture she had as well (the pictures I take of food never turn out good!). There's a lot of ingredients, but it's actually pretty easy! Try it, trust me, you'll thank me later :) Happy eating! ...

Thai Chicken Peanut Noodles

1 lb whole wheat thin spaghetti noodles (I just used regular noodles, not wheat)

2 Tablespoons sesame oil1 garlic clove, peeled
1 (1 inch) piece of fresh ginger, peeled
½ Cup smooth peanut butter
¼ Cup soy sauce
2 Tablespoons brown sugar
1 Tablespoon rice vinegar
1 scant teaspoon crushed red pepper flakes
1 Cup hot water

2 Tablespoons extra virgin olive oil
½ Cup finely chopped white onion
½ Cup finely chopped red or orange bell pepper
2½ - 3 Cups cooked, shredded chicken breast
¼ Cup finely chopped cilantro leaves
1/2 teaspoon salt, or to taste

¼ Cup dry roasted peanuts, chopped
2 Tablespoons sesame seeds (I just sprinkle some on top)

*You can cook the chicken however you like, but I put it in the crock pot a few hours ahead of time with about 1/2 cup chicken broth, 1/2 cup water, onion flakes and some onion powder.

Place garlic and ginger in food processor until well chopped. Add peanut butter, soy sauce, brown sugar, vinegar and red pepper flakes. Pulse until well combined and slowly add hot water. Set aside. (I don't have my food processor out here so I just cut everything up and mixed it in a bowl. Takes more time, but it works!)

Bring water to boil and cook noodles. Meanwhile, place olive oil in hot skillet over medium heat. Saute onion and bell pepper for 5 minutes or until softened. Stir in chicken breast, cilantro and salt. Add sauce and stir until heated through. Add chicken mixture to noodles. Toss to coat and garnish with peanuts and sesame seeds if desired. Makes 6 servings.

That is so funny you made this...great minds think alike. I just got a recipe of the Kraft website for something similar and I posted it on my blog too. It was yummy.
ps you need to come to Cali so you can enjoy some warmer weather. It was 92 degrees yesterday...hot hot hot

Looks like it could be pretty good. I miss hanging out with you guys. I hear the weather is pretty bad. That sucks! Anyways should be back soon then we can go on our walks.
